All three were illustrated by Harry Bliss.

Beet and Pumpkin Soups

Browned onions for pumpkin soup.Beets with translucent onions for pink soup.
Pumpkin soup before being pureed.

Finished pumpkin soup.
Finished pink soup.
Opinion? Better than raw potatoes. Beets belong in salads and pumpkin belongs with sugar as in pumpkin pie, pumpkin bread and pumpkin cookies. At least it was an attempt at healthy recipes but just not too our taste. Oh well, that's how the soup sometimes simmers!

Author 44: Lynne Cherry is an inspiring green author

It doesn't make sense to destroy entire eco-systems without seriously looking at future consequences. Some changes can benefit everyone such as plans of re-forestation and re-vegetation for areas destroyed by natural disasters, man, animals or even pests and diseases. Other areas should be evaluated before being swallowed up for uses different from the native climate and land. Mangroves provide stability for shore lines around the world.
